Pheonix Pecans aka Pecans of Awsomeness

Ok, so buying a cooking magazine that says it has the best recipes of the year is not a good idea when you are hungry.  First of all, it just makes you hungry and then it just makes you mad that there is no one there cooking for you.  But that is ok, I set off on an adventure none the less.  Now don't get your hopes up this is not Julie & Julia part 2 here.  This is more like Jordan & Stubbornness part 463,700,009*.  I decided that I would make some of the meals in this magazine, as it said that most anything could be made in under 30 minutes.  So here goes.... in this installment we have: how to kill your creative director with butter:

  • 2 tablespoons butter.
  • 2 tablespoons brown sugar.
  • 1/4 teaspoon cayenne pepper (increase to your taste.)
  • 2 cups pecans (though you can use any unsalted nut you like. No, I am not available).

Mix the brown sugar and cayenne in a mixing bowl.  Nothing too fancy.  Just remember not to inhale the cayenne pepper when opening.  For the record the purchase of the cayenne was the second most costly item in this adventure.

Step 2: Harden Arteries, Ohhhh Butter

Now melt your butter in a skillet.  This is the part where you woo and woo and ahhh and settle for early retirement as you will die from all the butter.

Step 3: Put on the Pounds

With the butter all melted add your sugar/pepper mixture and turn down the heat.  Stir continuously as not to burn the sugar.

Step 4: Nutty Goodness

Add the 2 cups of your nuts.  Here we used pecans which honestly goes well with brown sugar.  It was like having candy in New Orleans.  Stir and toss the nuts in the sugar/butter mixture until coated.  Then place the nuts on a rimmed baking sheet and put into oven (@375) for 15 minutes.

Step 5: Pretend it is Healthy

You can pretend the end run is healthy for you by serving the nutty goodness over ice cream.  I chose to be a real cheat and cut up an apple, with 1 scoop of french vanilla ice cream.  Enjoy the nuts and well, all I can say is watch out as every now and then you will get a nut with a bit more action packed pepper than you are expecting.  It is a yummy treat.  Oh, and just for the record the most expensive part of this adventure was the pecans.
